What did you say is coming out of your ears?

Here's a recipe for those of you in pain due to zuccini sprouting from your ears. It's great for lunch or as a dinner side dish. You can top it with sour cream and salsa or with applesauce.

Zuccini Pancakes

3 cups peeled and grated zuccini
4 eggs
1/2 cup flour
1/2 cup grated parmesan cheese
1/2 cup mayonnaise
1/2 cup chopped green onion
1 teaspoon lemon juice
salt and pepper to taste

Mix all ingredients except zuccini until a smooth batter is formed.
Add zuccini.

On a hot griddle melt 1 Tablespoon butter with 2 Tablespoons olive oil. (Yes, the ratio is important).
Spoon out 2 tablespoons of batter for each pancake. Brown well on each
side until golden brown.

This recipe makes about 30 small pancakes.

Did you know that in Idaho you can leave your car unlocked when you go to church any time of the year but summer. If you forget during July, when you come out of church your car is full of zuccini.

Probably would have been much healthier than the pancakes I made today...full of chopped chocolate chips.

But, since I haven't been able to get to setting up a garden in this house yet, we aren't having the excess zuccini issue, so I guess chocolate will have to suffice for now.

I love how well you have plated and set your table! So inviting.

In our Relief Society we once had a zuchinni workshop and a dinner where everything on the menu was made with zuchinni, including dessert. I agree about the table setting. It looks like the pictures I drool over in home decorating magazines.

Judy, you'll never guess who's in our ward: Sue (Hall) and Andy Caprio. Do you remember them? She sure remembered you guys.

And your zucchini pancakes look great. I bought the 101 Things to do with Zucchini cookbook to find ways to use mine. We haven't had to give a single one away.

This is one of April's favorite dishes with zucchini, they are great. Lots of zucchini with pasta as well- yum! (pasta with green and yellow zucchini, onions, little olive oil, and topped with asiago). Looking at your other comments... how many ways can you spell zucchini? It looks like you guys are enjoying your travels- I'm very jealous. Travel is rare these days for us, but I love it when we do!
